What an easy, healthy and cute idea for school snacks, my kids LOVE them! I made mini-muffin size bites but you could make them bigger in a regular muffin pan.
The mini-chocolate chips are a great little “treat” for the kids but you could easily substitute them for dried cranberries, raisins or even dried blueberries.
Ingredients:
- 2½ cups organic quick oats
- ½ cup crispy rice cereal
- ¼ cup organic shredded unsweetened coconut
- ¼ cup toasted wheat germ
- ¼ cup milled flax seed
- ¼ cup brown sugar
- ½ tsp salt
- ½ cup canola or safflower oil
- ¼ cup organic honey
- 1 tblsp pure maple syrup
- 1 tsp organic vanilla extract
- ½ cup mini-semi sweet chocolate chips
Instructions:
- Preheat oven to 350 degrees.
- In large bowl, mix quick oats, crispy rice cereal, coconut, wheat germ, flax seed, brown sugar and salt.
- In a small bowl, whisk canola oil, honey, maple syrup and vanilla extract. Add to oat mixture and stir well until all ingredients are combined and wet. Stir in mini-chocolate chips and continue to stir until combined.
- Scoop granola mixture into muffin cups and place in muffin pan. Bake for 15-20 minutes or until golden brown. Store in airtight containers in your pantry.
Makes 2 dozen mini muffin size granola bites.
