Nut Free Granola Bites

What an easy, healthy and cute idea for school snacks, my kids LOVE them! I made mini-muffin size bites but you could make them bigger in a regular muffin pan.

The mini-chocolate chips are a great little “treat” for the kids but you could easily substitute them for dried cranberries, raisins or even dried blueberries.

Ingredients:

  • 2½ cups organic quick oats
  • ½ cup crispy rice cereal
  • ¼ cup organic shredded unsweetened coconut
  • ¼ cup toasted wheat germ
  • ¼ cup milled flax seed
  • ¼ cup brown sugar
  • ½ tsp salt
  • ½ cup canola or safflower oil
  • ¼ cup organic honey
  • 1 tblsp pure maple syrup
  • 1 tsp organic vanilla extract
  • ½ cup mini-semi sweet chocolate chips

Instructions:

  1. Preheat oven to 350 degrees.
  2. In large bowl, mix quick oats, crispy rice cereal, coconut, wheat germ, flax seed, brown sugar and salt.
  3. In a small bowl, whisk canola oil, honey, maple syrup and vanilla extract. Add to oat mixture and stir well until all ingredients are combined and wet. Stir in mini-chocolate chips and continue to stir until combined.
  4. Scoop granola mixture into muffin cups and place in muffin pan. Bake for 15-20 minutes or until golden brown.  Store in airtight containers in your pantry.

Makes 2 dozen mini muffin size granola bites.
