Maple Oatmeal Waffles, Gluten Free

These waffles have such a wonderful, sweet flavor from the oat and almond flour to the cinnamon and maple syrup, YUM!

Ingredients:

  • 1 cup oat flour
  • ½ cup almond flour
  • ½ cup quick cooking oats
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • 1½ cups organic milk
  • 2 large organic eggs
  • ¼ cup pure maple syrup
  • 8 tblsp organic unsalted butter, melted
  • 1 tsp vanilla extract

Directions:

  1. Preheat waffle iron. In a medium bowl, whisk oat flour, almond flour, oats, baking powder and salt.
  2.  In a separate bowl, whisk milk, eggs, maple syrup, melted butter and vanilla. Pour wet ingredients over flour mixture and mix until combined.
  3.  Using a small ladle, pour batter in center of each section. Cook waffles for 3-5 minutes or until lightly brown. Serve with fresh fruit.

Makes 10 waffles.
