This recipe is a classic Portuguese dish. It’s authentic, delicious and full of childhood memories!
Ingredients:
- 1 large onion, thinly sliced
- 2 large red pepper, thinly sliced
- 3 large garlic cloves
- ¼ tsp red pepper flakes
- 1 tsp salt
- ½ tsp pepper
- ½ tsp paprika
- dash of cayenne pepper
- 1 tbsp tomato paste
- 1 (15oz) can crushed tomatoes
- 1 cup dry white wine
- 1 cup chicken stock
- 1 bay leaf
- hand-ful fresh cilantro
- 2 lbs. white cod fish
- 1 lb. lobster tails
- 2 lbs. shrimp, peeled and de-veined
- 2 lbs. scallops
- 1 lb. little neck clams
Directions:
- In a large Dutch oven, sauté onion and red pepper in olive oil until softened. Stir in garlic and red pepper flakes and cook for a couple minutes. Season with salt, pepper, paprika and cayenne pepper.
- Stir in tomato paste, crushed tomatoes, white wine and chicken stock. Add in bay leaf and cilantro. Bring to a simmer.
- Add in cod fish, lobster tails, scallops and shrimp, cover pot and cook for about 5 minutes. Then, add in clams and cover pot again. Cook for about 5 minutes or until clams open up. Serve with rice.
