Summer Vegetable “Burgers”

It is difficult to find healthy, gluten free “vege” burgers so I decided to make my own! We have a ton of fresh, delicious zucchini from the garden so I’ve been using it up in all sorts of recipes. It’s amazing how many things you can make with zucchini! These burgers are amazingly delicious and better then any store bought burgers!

Ingredients:

  • 1 small onion
  • 4 medium carrots
  • 2 large zucchini
  • 2 large garlic cloves
  • 1 tsp salt
  • ½ tsp pepper
  • ¼ tsp red pepper flakes
  • ½ cup quick cooking oats
  • ¼ cup gluten free bread crumbs
  • ¼ cup millet or other flour
  • ¼ cup parmesan cheese
  • 2 tbsp fresh basil, minced
  • 1 large organic egg

 Instructions:

  1. In a food processor, grate onion, carrots, zucchini and garlic.
  2. Coat bottom of sauté pan with olive oil and cook vegetables over medium heat until soft, about 10 minutes. Season with salt, pepper and red pepper flakes.
  3. Add vegetables to large bowl, along with oats, bread crumbs, millet flour, parmesan cheese, fresh basil and egg.
  4. Scoop a cup of filling and shape into patties. Cook in olive oil in a sauté pan over medium heat, until golden brown.

Yields 8 burgers.
