Cooking vegetarian meals may seem boring and complicated, but it’s easy!
What I found useful when cooking vegetarian meals, is that you don’t need to make a “vegetarian” recipe. You can change many of your favorite, meat or fish meals into vegetarian dishes. For example, when I make tacos, I have two saute pans on the stove, one with ground turkey and the other with ground tofu. If I make chicken parmigiana, I use the same ingredients to make tofu parmigiana. (Actually, one of my cousins preferred the tofu parmigiana to the chicken.) Even with lasagna…. I’ve never made a meat based lasagna and always found that a spinach and cheese lasagna is much tastier, it’s healthier and it’s vegetarian!
Try one of these all time classic meals and turn them vegetarian one night. You will be presently surprised at how tasty it is and how to get your vegetables!
What kind of tofu do you use? do your kids eat it and can you give some guidance on tofu prep?

When cooking with tofu, use FIRM or EXTRA FIRM so that it holds its shape. Otherwise, if you use soft or silken, it will fall apart because it is too delicate. You can use the soft or silken for smoothies.
We buy the Nasoya Organic Firm Tofu or the Nature’s Promise Organic Firm Tofu from Stop and Shop or the Trader Joe’s Organic Firm Tofu. Personally, I think they all taste the same. Just make sure to drain the tofu and dry it in paper towels.
Yes, my kids love Tofu! As a matter of fact, I will just make a simple, breaded tofu as a replacement for a meat dish. It’s simple. You cut the tofu into 1/4″ slices, dip them in egg and then a bread crumb and parmesan cheese mixture and saute in olive oil.
The Tofu Parmagiana recipe, made with breaded tofu, home made sauce and fresh mozzarella is very delicious. Go for it!

I agree. I am not vegetarian but we do eat a lot of meatless meals at our house. When we do, I just pick a normal recipe and sub and add a few things to make it work.
Thanks Liz! I will try it! Also, any good bean dishes? I am looking for good protein that is not meat… My almost 3 year old is not always wild about meat so it would be nice to have some other options. Fast and healthy children’s meals – please!!!
