This is the time of year when you see hundreds of pumpkin recipes! Well, this one is definitely one of my favorites, the Pumpkin Morning Glory Muffin.
Mostly, it tastes like a morning glory muffin, filled with all the goodness of carrots and apples, coconut, raisins and walnuts, sweetened with maple syrup and now flavored with a hint of pumpkin. Plus, it’s healthy and gluten free – made with a combination of oat and almond flour. A perfect muffin filled with all the fall flavors. Taste it for yourself, warm right out of the oven on a cold fall day.

To make the gf flour, do you just grind raw almonds and oats?what ratio?

Hi, I buy oat and almond flour already milled. However, you can do it yourself in a high power blender or food processor. I would use a equal amounts as in recipe, plus another 1/4 cup. For example, I would grind up 1 1/4 cups of raw almonds to make 1 cup of almond flour. That should work fine. With GF flours, you don’t need to be exact. I tend to put in more then less and it works out well, especially for muffins and quick breads.
