Youth Group Cooking Class

Right before the holidays, we had the pleasure of hosting a Food Jules Cooking Party at my daughter’s youth group. It was so much fun! The girls really enjoyed baking some yummy sweet treats for those in need.

The girls baked Cranberry Orange Muffins with an Orange Glaze, Pumpkin Muffins with a Maple Glaze, Oreo Truffles and Holiday Funfetti Cookies. The girls were so happy to be baking for the Mercy Learning Center in Bridgeport. We hope they enjoyed their goodies, the girls (and boy) really put their love into them.

To celebrate at the end of the party, the girls got to enjoy some of the cookies along with some Hot Cocoa.

Snickerdoodle Cookies

We recently discovered these delicious cinnamon sugar cookies. They are sweet and delicious and so easy to make, and they make the perfect gluten free cookie when you replace the all-purpose flour with almond flour.

You should definitely include these Snickerdoodle Cookies in your holiday baking line up. I know we will. What other yummy cookies will you be baking this holiday season?

Five Years

On November 8, 2010 our second son, Julian was born. This past weekend, we celebrated his fifth birthday.

He is love. He is beauty. He is faith. He is pure. He is eternity. He is a blessing. He is and always will be in our hearts and soul. We miss you Julian and we love you. Happy Birthday to our sweet baby boy.

Almond Cookies, Gluten Free

Nothing beats the sweet smell of Pure Vanilla Extract… well, except maybe Pure Almond Extract. Smells divine and tastes even better. I love those “wedding cookies” or as we like to call them at our house, “snowball cookies” with the powdered white sugar on the outside and the butter cookie filled with chopped pecans in the middle. They are one of our favorites. Well this time, I wanted to experiment with a more traditional type of cookie but with the same almond flavor and I am so glad that I did.

These Almond Cookies are beyond words, especially right out of the oven. Make these!!!! You will love me for it.

 

 

It’s that time of the year again…

The leaves are changing and the weather is cooler. There is more baking (although the weather or season doesn’t preclude me from ever baking) and we start eating warm soups and stews. It’s a great time of the year but not such a happy time for me. I prefer the spring and the summer when all the trees, flowers and vegetables are blooming. It’s a time of renewal and growth, beauty and happiness. I don’t mean to be a downer for the Fall and Winter but it really isn’t my cup of tea. Also, it reminds me of a time of much sadness.

Julian was born in the Fall, this is HIS time of the year and if he were here, I know my feelings towards the Autumn would be completely different, we would be celebrating his birthday with him and it would be so special. We do celebrate Julian’s birthday every year and we honor him in a very special way each and every year, but it’s just not the same as it would be if he was actually living and here with us, celebrating with us, smiling with us, opening gifts, running, laughing and enjoying life and his family. As I am writing this, I can actually imagine this in my mind and it is making me cry. I have been missing him a lot lately, thinking a lot about him every day. Again, maybe this time of the year is an extra reminder of our loss and how much we miss him. I do miss him sooooo soooo much.

In memory of my sweet, baby boy Julian. We love you and honor you and think of you every single moment of every single day. To all those who are reading this, give your sweet, living children a great big hug and kiss and remind them just how much you love them and how lucky you are to have them with you, healthy and smiling.

Greek Salad with Chickpeas

I am pretty boring when it comes to salad choices…. I usually always get the Chicken Caesar with dressing on the side and I love the salad bar at Village Bagels in Norwalk. I enjoy the mixed greens and romaine with chickpeas, carrots, cucumbers, walnuts and a scoop of tuna salad on top, yum. I also love the Burrito Bowl at Chipotle with lots and lots of lettuce on top, I call that the ultimate salad, love it so much. However, I don’t ever get the Greek Salad or the Cobb Salad or any of those other fancy salads.

Well, this time I found this recipe for a Chickpea Greek Salad and it certainly caught my attention. I just love chickpeas. Frankly, I am obsessed with chickpeas!!! So, when I saw this, I had to give it a shot, even though I am not a big fan of feta cheese or kalamata olives, just too salty for me. I thought my husband would love this since he loves Greek Salad.

My review: It was delicious!!! It is full of healthy ingredients, from chickpeas, to peppers, cucumbers to tomatoes and I added lots of romaine lettuce. I just love the crunch from the lettuce and the cucumbers. Of course, I put most of the olives to the side and gave them to him, lol and I sprinkled less then the recommended feta cheese but if you like it, you can certainly add more. It was very good and so healthy for you, I will definitely make it again.

Vegetarian Chickpea salad with olives, feta, tomatoes, onion, garlic and a light lemon dressing! Add quinoa for more protein or enjoy on it's own!
