The Green Smoothie

I know what you are thinking… a Green Smoothie, is that going to taste any good? Let me tell you, my kids drank two batches of it last week, they loved it. Today, I introduced this recipe to the kids in my cooking class and they raved about it to their parents! It really is very delicious.

The baby spinach makes it the green color, which is the fun part, but you don’t taste it at all, you just taste the sweetness of the fruit. It is delicious AND nutritious! You have to try it this summer and feel free to mix it up with any fruit that is in season.

Enjoy!

Homemade Playdough

Last night, the kids and I made homemade playdough. I found this wonderful recipe using Jello as the “color” base, which is great since there is such a large variety of Jello flavors and colors.

The dough came out great, very pliable, easy to make and smells wonderful. What a fun, “cooking” type of activity for you and the kids on a rainy or extremely humid day. Lucas couldn’t wait to get up this morning and play with his playdough again.

Enjoy!

Peanut Butter Pancakes

For those of you who LOVE peanut butter, this recipe is for you!

Our children and my husband eat so much peanut butter in this house, that we should invest shares in it. Our favorite brand is the Whole Foods 365 Organic Peanut Butter, both creamy and crunchy versions. This is the best peanut butter we have ever eaten and trust me, we’ve tried all of them! Our second favorite is the Trader Joe’s Organic brand, however, the peanut oil settles on the top of the peanut butter, which makes it extremely messy.

The kids also enjoy a Peanut Butter Banana sandwich that my husband makes for breakfast sometimes. So I thought, I’d incorporate both of these favorite ingredients with another favorite treat, chocolate! So, here it is…. our recipe for Peanut Butter Banana Chocolate Chip Pancakes!

Hope you like them as much as we did. As a matter of fact, the kids polished them off tonight for dinner!

My love affair with chocolate!

Last week, I discovered a recipe for these soft, decadent, rich Chocolate Fudge Cookies! These cookies are so delicious with a soft, fudge-like brownie inside. It was love at first bite!

I even made them a little more nutritious by swapping out some of the white flour for whole wheat flour and it doesn’t make a difference at all. I recently starting using a white whole wheat flour from Trader Joes because it is very light in color and taste with the benefits of being a whole grain. Whole White Wheat is a type of wheat and has all the three parts of the seed, the bran, germ and endosperm. The only difference is it lacks the bran color. Bob’s Red Mill also produces white whole wheat flour. It’s great and I love using it. Next time, I’m going to experiment with using all white whole wheat flour.

As a matter of fact, as I was typing out this post and recipe, I decided to make a couple batches for Lucas’ pre-school teachers. It’s his preschool graduation tomorrow so I wanted to bake up something special for his wonderful, sweet teachers. I can’t believe he is graduating preschool. I remember his first day. I still remember Lilliana’s first day. Feels like it was just yesterday yet now Lilliana is almost as tall as I am! I wish Julian was here to help us celebrate this special day with Lucas. I know he would be filled with so much love and excitement around his brother and sister. He will be with us in our hearts tomorrow, as he is every single day!

Enjoy baking and eating these delicious chocolate cookies.

Food Revolution Day

This Saturday, May 19th is the first annual Food Revolution Day!

Food Revolution Day  is a chance for people who love food to come together to share information, talents and resources; to pass on their knowledge and highlight the world’s food issues. All around the globe, people will work together to make a difference.

Food Revolution Day is about connecting with your community through events at schools, restaurants, local businesses, dinner parties and farmers’ markets. It’s a chance to inspire change in people’s eating habits and to promote better food education for everyone. We need to do it for ourselves and for the future of our children.

Make your first step on Saturday. It’s easy! You can start by making a fresh fruit smoothie as a healthy, refreshing snack, host a family dinner night by cooking a healthy meal together and then sitting around the table, eating together as a family, go for an afternoon walk or bike ride, go to your local farm and pick up some vegetable plants to start a small garden. If each one of us takes charge of our health, then together we can fight obesity, cancer, diabetes  and teach our children how to live happy, healthy lives.
