Kale Salad

Kale, the king of all greens and the superstar of all vegetables is finally being recognized for all of its nutritional benefits.

Kale is available in many different varieties, with Curly and Lacinato (dinosaur) kale being the most popular. Dinosaur kale is my favorite, a little more tender and mild in flavor then the curly version. Although, in many Portuguese recipes, we tend to use the curly kale. This powerful green vegetable has always been a part of my life, since I was a child, primarily eaten in one of Portugal’s signature soup dishes, Kale Soup (aka Caldo Verde).

However, on these warm spring days, I have really been enjoying my Kale Salad, sweetened by a light lemon vinaigrette and dried cranberries and sprinkled with some chopped pecans and freshly shaved parmesan cheese. This Kale Salad is so easy to prepare and the longer it sits, the better it tastes. The important part to making this salad is to be sure to massage the leaves. I know that may sound a little strange, but since its not cooked, the more you massage it, the softer the leaves. I’ve had a few different kale salads but this homemade version is really my favorite, a perfect light lunch.

The Sunshine

A few days ago, I celebrated my 37th birthday in Portsmouth, New Hampshire. It was a beautiful, sunny day and I was blessed to be enjoying this gorgeous day with Michael, Lilliana and Lucas. It was so special to be surrounded by their excited smiles for our little weekend retreat.

The entire weekend, we included Julian in our vacation, talking about little things that reminded us of him, especially the trees with the white leaves. Lucas refers to those as “snow trees” and calls Julian, the “snow boy”, because he was born on the first snow fall in the Fall 2010 and throughout his short 9 weeks with us, it snowed pretty much every weekend!

It had been a little over six years ago when we last visited Portsmouth. As a matter of fact, I was pregnant with Lucas the last time we were there so it was nice to re-visit a place that had fond memories. We also had the chance to visit the Nubble Lighthouse in York, Maine. Michael and I reminisced about how it has been over 10 years since we were there and I was pregnant with Lilliana on that trip. The kids really enjoyed hearing these stories and we couldn’t believe just how much has happened in these last ten years! Our entire life has happened, good and bad, from marriage to giving birth to three children, losing one to a miscarriage and losing another to SMA. It feels that in only ten years, we have lived an entire lifetime.

Julian’s passing has really broken our hearts and we miss him tremendously. We talk about him all the time, which is so refreshing, to be open about it with our children and to get a much needed hug or kiss from them when they see the sadness in our eyes and in our hearts. They are truly such wonderful souls and their love shines on us every day.

Well, I wanted to share a special photo with all of you. Lilliana and I were trying to take a photo of the two of us by the water but as you can see, we didn’t capture any of the water. However, you’ll see we did capture something much more unique and special, Julian’s presence. Julian’s love is shining down on us here in the beautiful sunlight. It’s quite magical, actually, and it reminds me to appreciate all those little moments together with your loved ones, as they are more then little, they are unique and special and hold a lot more then you can ever imagine.

Cauliflower Macaroni and Cheese

Here is an easy, nutritious and delicious recipe for parents looking to add a little extra nutrition to an all-time classic American dish, Cauliflower Macaroni and Cheese.

You won’t even notice there is pureed cauliflower in this pasta dish because it is so creamy and packed with so much cheese. The cauliflower has a very mild taste  but it adds so much creaminess to this dish. This is a perfect comfort food and so easy to put together. We made it tonight for dinner and it literally took me 20 minutes from start to finish. Plus, that included sticking it in the oven with a sprinkle of bread crumbs and extra parmesan cheese on the top, which gave it a really nice color and crunch!

Try out this recipe one night when you’re in a pinch for time. Your kids will devour it!

Chocolate Banana Chia Muffins, Gluten Free

So much for sunshine and warmth, HA! These last couple of days have returned to cold and cloudy, but hopefully it won’t last too, too long. I heard someone say that here in New England, all we talk about is the weather. That couldn’t be more true… we all get so excited when it’s over 60 degrees and the sun is out, that we immediately switch our gear to capris, short sleeve shirts and flip flops, or at least I do. Mother Nature, bring us more sun, pretty please. In the meantime, you can warm up in the kitchen with these sweet, Chocolate Banana Chia Muffins!

Let me start by saying, YUM. When you first look at this recipe, you will probably question the taste as they are made with chia seeds and dates and there isn’t any added sugar. But, I ASSURE YOU, these are SUPERB! The minced dates, mashed bananas and chopped up dates, along with some pure maple syrup, really sweeten up these muffins and give them such a depth of flavor and the chia seeds give these muffins such a nice crunch, along with providing your body with some good omega 3. Plus, they are made with unsweetened pure cocoa powder, which is such a strong antioxidant and who doesn’t love chocolate? I think these have become my favorite muffin.

If you are not familiar with chia seeds, they are great!!! These little seeds have become a new favorite around here. I throw them into baked goods, smoothies and even oatmeal. They give everything such a nice crunch and nutty flavor and they are packed with omega 3, protein, antioxidants, fiber and magnesium. Chia seeds are a super food, along with the better known, flax seeds and hemp seeds.

Oh, one other thing, they are GLUTEN FREE, made with oat and almond flour, another great natural source of fiber and protein! So, you don’t need to feel guilty about eating these chocolate muffins since they are packed with so many nutritional benefits! Enjoy.

Sun equals Happiness

Finally, we are enjoying some warm weather and sunshine!!!

I have to admit, it has been a very, very depressing last few months. Winter started back in October and really didn’t end until last week, so it’s been a solid 6 months of cold, dreary, snow filled days. I am done and ready to welcome the chirping birds, the sunshine on my face and most importantly, my flip flops! It feels so good to not have to bundle up in a coat, socks and my winter boots anymore. I don’t know about you all, but when the sun is shining, my face is smiling! Welcome, SPRING!

Our spring session is starting in our after school enrichment programs and our theme is Celebrating the Gardening Season, because as you all know, springtime also means its time to clean up that home garden and plant those seeds. We’ve already started doing that here in our home. The kids are so excited, as am I, to start seeing the vegetables grow and the plants, trees and flowers bloom. It is my favorite time of year.

The Kids Menu

Whenever my family and I go to a restaurant, there is always The Kids Menu, which is made up of hamburgers, chicken nuggets, grilled cheese and french fries. I get it, kids love to eat that stuff, as do adults sometimes, which makes complete sense if you are dining out at Friendly’s or your local burger joint. However, if you go out to an ethnic restaurant, don’t you think the Kids Menu should have similar dishes as the adult menu, in just smaller portions instead of being restricted to typical American fare? It makes me so angry when I see hamburgers listed on an Asian kids menu!

Is it that difficult to believe that kids can enjoy other types of food besides macaroni and cheese, grilled cheese, chicken nuggets and hot dogs?  They can, we just have to let them explore food as we let them explore the rest of their world, from sports to music to the books they read and the toys they play with! Food is beautiful! We are so lucky here in America to be surrounded by so many nutritious and delicious varieties of food. Why limit ourselves or our beautiful children to just macaroni and cheese?

One of the most important things that I have learned about being a mom, is to always protect my children and this doesn’t just mean to protect them against bullies or helping them cross the street safely. It’s more than that. I vowed to protect their well being, emotionally, physically and mentally. This means, I have to help them make sound, smart decisions about the food they eat, the activities they participate in, the friends they associate with and the time they spend learning and growing.

Our children are miracles, they are our little creations and they should be well-nourished mentally and physically. It’s important to teach them about what’s right and wrong and about what they are putting into their little, growing bodies. This is their fuel, their mind and body use what they eat to help them grow into strong, healthy, motivated, smart adults one day.

It isn’t easy being a parent, all of the decisions we make in our lives will touch their lives, so it’s important to try our very best to make the best possible decisions we can. Besides, the more we learn about the world around us, the more we will grow mentally, emotionally and physically and this will keep our minds and bodies growing healthy and strong, which means more years here on earth to enjoy with our beautiful, healthy children.
